Real Food Recipes - Classic Cole Slaw

8 c. finely diced cabbage (about 1 head)
1/4 c. diced carrot
1/3 c. agave nectar (Wholesome Raw Organic Blue is good)
1/2 t. salt
1/8 t.
pepper
1/2 c. mayonnaise - high-oleic, cold-pressed
mono-unsaturated (Spectrum Naturals is good) 1/4 c. buttermilk
1 1/2 T. white vinegar
2 1/2 T. lemon juice

Finely dice cabbage and carrots. Pour cabbage and carrot mixture into large bowl. Using regular blade on food processor process remaining ingredients until smooth. Pour over vegetable mixture and mix thoroughly. Cover bowl and refrigerate several hours or overnight before serving.
