Real Food Recipes - Sesame Chopped Salad

Salad:
1 small head cabbage , shredded
1/4 head iceberg lettuce, shredded
1/2 lb. fresh bean sprouts
1 c. jicama, cut julienne style
1 c. toasted slivered almonds
1 recipe Asian Salad Dressing (see recipe below)

Directions: In a large bowl, combine cabbage, lettuce, bean sprouts, jicama and almonds. Drizzle dressing (see recipe below) over salad and toss to combine. Makes 6 servings.

Dressing:
1/4 c. soy sauce
1/4 c. white wine vinegar
3 T. raw honey
1 T. organic peanut butter (peanuts and salt only kind)
1 T. grated fresh ginger
1/2 t. dried coriander, crushed
1/4 c. expeller-expressed safflower oil
1/4 c. toasted sesame oil (expeller-expressed)

Directions: In a bowl combine all ingredients except safflower oil. Whisk to combine. Slowly drizzle in oils, whisking until thickened.
